ENGLISH PEA SALAD 
1 (10 oz.) pkg. frozen English peas
1/2 c. Cheddar cheese, cubed
2 med.-sized sweet or dilled pickles, chopped
1/2 c. mayonnaise
1/2 c. sweet red pepper or pimento
1/2 c. onion, chopped
Salt to taste
2 hard boiled eggs, chopped

Combine all ingredients. Toss lightly with mayonnaise. Refrigerate 24 hours before serving. Serves 2-4.
