DOWNEAST BLUEBERRY CAKE 
2 eggs, separated
1 c. sugar
1/4 tsp. salt
1/2 c. Crisco shortening
1 tsp. vanilla
1 1/2 c. sifted flour
1 tsp. baking powder
1/3 c. milk
1 1/2 c. blueberries shaken in flour (wild Maine blueberries are best if available)

Beat egg whites until stiff, add 1/4 cup sugar.

Cream Crisco, add salt and vanilla; mix. Add the rest of sugar; mix. Add unbeaten egg yolks, beat until creamy.

Add sifted dry ingredients with milk. Fold in blueberries.

Put in greased 8x8 pan. Sprinkle with extra sugar. Bake at 350 degrees for 50-60 minutes.
