AVOCADO CHICKEN MELT 
4 chicken breasts, skinned and boned

2 tbsp. cornstarch
1 tsp. cumin
1 tsp. garlic powder
1 tsp. chili powder

Dredge chicken in above mixture.

1 egg (slightly beaten)
1 tbsp. water

Dip chicken in egg mixture.

1/3 c. cornmeal

Cover chicken with cornmeal.

Pan fry coated chicken in butter. Place in greased baking dish. Slice avocado and slice Monterey Jack cheese and place a piece of each on top of chicken pieces. Bake at 350 degrees for 15 minutes. Top with salsa, sour cream and scallions. Serve with rice or tortillas.
