SEAFOOD PRIMAVERA | |
2 1/2 c. fresh mushrooms 1 c. broccoli florettes 1/2 c. sliced carrots 1/4 c. butter 1/4 c. flour 1 tsp. onion powder 1 c. chicken broth 1/4 c. Parmesan cheese 1/4 tsp. white pepper 1/4 tsp. garlic powder or 1 clove garlic, minced Dash of coarse black pepper (ground) Dash of salt 1 c. milk 4 1/2 oz. medium deveined shrimp Snipped parsley Plunge mushrooms, broccoli and carrots into boiling water. Return to a boil and continue for 2 minutes. Rinse with ice water and drain. Melt butter in medium saucepan. Blend in flour and seasonings until smooth. Gradually stir in milk and broth. Heat and stir until thickened and smooth. Mix in veggies, shrimp and cheese. Garnish with parsley. Serve atop fettucini or rotini. |
