1 tbsp. olive oil 4 med. tomatoes (about 1 1/3 lbs.), cored & sliced 1/2" thick 1 clove garlic, minced 2 tbsp. minced parsley 1/8 tsp. black pepper 2 tbsp. grated Parmesan cheese Preheat the broiler. Grease a baking sheet with 1 teaspoon of the olive oil. Arrange the tomato slices in a single layer. In a small bowl, mix together the remaining olive oil, garlic, parsley and pepper. Drizzle the mixture over the tomatoes and sprinkle with the cheese. Broil 5" from the heat for 3 minutes or until the cheese is golden brown. |
