COUNTRY MEAT LOAF | |
2 tbsp. salad oil 1 med. onion, chopped 1 stalk celery, chopped 3 white bread slices 2 lbs. ground beef 1 med. carrot, shredded 1 1/2 tsp. salt 1/4 tsp. pepper 1 egg 1 tbsp. brown sugar 1 tbsp. cider vinegar 1 (8 oz.) can tomato sauce 1 tbsp. mustard In 2 quart saucepan, cook in salad oil, onion, and celery. In large bowl, tear bread into small pieces, add onion mix, ground beef, carrot, salt, pepper, egg, and 1/2 cup of tomato sauce. Mix well. In 12 inch baking dish, shape mix into 8 x 4 inch loaf. Set aside. In cup with a spoon, mix brown sugar, vinegar, mustard and remaining tomato sauce. Spoon mixture over meat loaf. Bake at 350 degrees for 1 1/2 hours. Serve warm. 8 servings. |
