COUNTRY MEATLOAF 
2 tbsp. salad oil
1 med. onion, chopped
1 celery stalk, chopped
3 slices whole wheat bread, cut into bite size pieces
2 lb. ground beef
1 med. carrot, shredded
1 tsp. salt
1/2 tsp. garlic salt or powder
1/4 tsp. cracked pepper
1 egg
1 (8 oz.) can tomato sauce
1 tbsp. brown sugar
1 tbsp. cider vinegar
1 tbsp. mustard

In 2 quart saucepan, over medium heat, heat oil, add the onion, celery, and carrot. Cook about 10 minutes. Meanwhile, in large bowl, combine beef, salts, pepper, egg and 1/2 of the can of tomato sauce and bread. Blend well. Add onion mixture and blend well again. In 12 x 8 inch baking dish, form loaf approximately 8 x 4 inches. In measuring cup combine brown sugar, cider vinegar, mustard and remaining tomato sauce. Spoon sauce over meat, bake in 350 degree oven for 1 1/2 hours.
