GOLD RUSH BRUNCH 
16 oz. pkg. hash browns
1/2 c. chopped onion
2 tbsp. chopped parsley
1/4 c. butter
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
1 c. sour cream
1/2 c. grated Cheddar cheese
8-12 pieces Canadian bacon or ham or 1 c. diced ham
8 eggs, scrambled

Prepare potatoes according to package directions and drain well. Stir in onion and parsley. Place potatoes in well greased 9 x 13 inch pan. Melt butter in saucepan; blend in flour, salt and pepper. Gradually stir in milk and heat until thickened. Add sour cream and cheese.

Lay bacon or ham slices on the potatoes; cover with half the sauce. Cover with scrambled eggs (which have been cooked and seasoned to taste). Pour remainder of sauce over all. Bake for 30 minutes at 375 degrees.
