MOCK ANGEL FOOD CAKE 
2 c. sifted cake flour
2 c. white sugar
1 tsp. baking powder
1 c. milk, boiling
1 tsp. vanilla or almond
7 egg whites (1 c.)
1 tsp. cream of tartar

Sift flour, sugar and baking powder together several times. Heat milk to boiling and add to dry ingredients while still hot - add flavoring. Beat egg whites and cream of tartar together until stiff and fold into first mixture. Bake 45 minutes in 9 x 13 inch pan at 325 degrees.
