PUMPKIN ROLL 
3 eggs
2/3 c. pumpkin
3/4 c. flour
1/2 tsp. salt
1 tsp. pumpkin pie spice
1 c. chopped pecans
1 c. sugar
1 tsp. lemon juice
1 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg

Grease and flour jelly roll pan. Mix above ingredients and bake at 350 degrees 15 minutes or until done.

When this comes out of the oven, turn it out onto a dish towel that has been generously dusted with sifted confectioners' sugar. Roll the cake and towel together until the cake is thoroughly cooled. Unroll, spread filling then roll it back up again, this time without the towel! (Serves about 12.)

FILLING:

1 (8 oz.) pkg. cream cheese
1/3 c. butter
1 c. powdered sugar
1 tsp. vanilla
