ALMOND RICE 
1 1/2 to 2 c. cooked cold rice
2 tbsp. sliced or slivered almonds
1 med. onion, chopped
Soy sauce
butter

Saute almond and onion in butter in large frying pan. Add additional butter and rice to pan, fry on low to medium heat. (Do not let rice stick to pan - you may need to add a little butter while frying).

Sprinkle salt, pepper and soy sauce into rice mixture to taste. Stir while frying. Frying should only take 5 to 10 minutes because rice is already cooked. (Serves 5 to 8.)
