ITALIAN PASTA SALAD 
4 oz. spaghetti or vermicelli
1 (6 oz.) jar marinated artichoke hearts (Cora Mia is the best)
1/2 zucchini, sliced
1 carrot, shredded or matchstick cut
2 oz. salami, cut in strips
1 c. shredded mozzarella cheese
2 tbsp. grated Parmesan cheese
Make up pkg. of Italian dressing

Optional: You can add olives, red bell pepper also if you like.

Break pasta in half and cook. Drain and set aside. Drain artichokes, reserve marinate. Chop artichoke hearts. Halve zucchini slices.

Combine all ingredients. Add artichoke marinate with Italian dressing and use enough to coat everything real well. Let sit at least 12-24 hours.
