OATMEAL FUDGE BARS 
OATMEAL LAYER:

1/2 c. shortening
1 c. brown sugar
1 egg
1/2 tsp. vanilla
3/4 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
2 c. quick oatmeal
1/2 c. walnuts

Mix together and save 1 cup for topping.

FUDGE LAYER:

1 (6 oz.) pkg. chocolate chips
1 tbsp. butter
1/3 c. sweetened condensed milk
1/4 tsp. salt
1/2 c. walnuts
1 tsp. vanilla

Combine the first four ingredients, cook over low heat until chocolate melts. Add walnuts and vanilla. Spread over oatmeal mixture. Top with reserved cup of oatmeal mixture. Bake 25 minutes at 325 degrees.

More healthy if you substitute honey for brown sugar, wheat germ for walnuts and carob for chocolate chips.
