HOT ITALIAN SAUSAGE 
12 or more Hot Italian Sausages
1 large Onion, finely chopped
3 qt. or more Water, personal choice of consistency
6 large or 8 medium Potatoes
1 - 2 lbs. Baby Carrots, cut in third
1 pkg. Celery Hearts, sliced into 1/4 inch pieces

Place Sausages in Water bringing to a boil and simmer until the sausages are firm. Remove the sausage, being careful not to pierce them when taking them out (this could add unwanted fat to the soup). Cut the sausage into bite-size pieces and return to the water.

Put the Carrots into a covered casserole dish with enough broth to steam them and microwave on high for about 10 - 15 minutes so they are somewhat tender. Return to the soup pot. Repeat this procedure with the Celery.

Add the Potatoes and simmer until they are tender.

Great served with homemade rolls.

Since microwave ovens vary in power, you may need to adjust your cooking time.
