MINUTE RICE PUDDING 
1 c. cooked rice
2 c. milk
2 eggs, separated
1/2 c. raisins
1/2 c. sugar
Dash of salt
Dash of nutmeg

Heat rice and milk in top of double boiler. Beat egg yolks until thick. Add sugar, salt and nutmeg. Stir in about 1/2 cup hot milk-rice mixture. Add to remaining mixture in double boiler. Add raisins, cook 3 to 5 minutes, or until thickened. Fold in stiffly beaten egg whites. Chill and serve with cream. Approximate yield: 6 servings. I always double the recipe and it disappears like magic.

Super easy. Although I did change it. Just mixed 2 eggs, 2 cups of milk, 1/2 cup of sugar and leftover rice (closer to 2 cups) and a splash of vanilla. cooked in double boiler until thickened. sprinkled with cinnamon. Yummy!
