PIZZA QUICHE | |
1 Pat-a-Dough crust 2 1/2 c. grated sharp Cheddar cheese 1 1/2 c. grated Mozzarella cheese 1 c. grated Swiss cheese 4 eggs 1 c. diced pepperoni 1 c. red salsa, preferably hot Preheat oven to 400 degrees. Pat dough into bottom and up the sides of a 10 inch deep dish pizza pan or pie plate with high sides (1). Bake for 5 minutes. Remove from oven and reduce temperature to 350 degrees. Combine cheeses. Sprinkle half the cheese mixture over crust (2). Beat together eggs, pepperoni and salsa, then pour the egg mixture over the cheese (3). Top with remaining cheese mixture. Bake quiche for 45 minutes or until set. Cut into small wedges to serve. This pizza will be easier to cut if allowed to stand for 10 minutes first. Note: Salsa is available in ethnic food sections of most supermarkets. If not available, substitute chili sauce. |
