MEATBALL MINESTRONE 
1 pkg. frozen chopped spinach, thawed & pressed
1 1/2 lbs. ground beef
1/3 c. bread crumbs
1 egg
Salt & pepper
1 lg. onion
7 c. beef stock or bouillon
1 can stewed tomatoes
1 can kidney beans
1/2 tsp. each oregano & basil
1 c. each sliced carrots & celery
1 c. uncooked macaroni

Mix first 5 ingredients; brown in Dutch oven. Remove and set aside. Saute onion until limp; stir in stock, tomatoes, beans, oregano and basil. Cover and simmer 10 minutes. Add carrots and celery. Cook 10 minutes more and add macaroni. Cook until tender. Return meatballs to soup and heat thoroughly; skim fat.
