HEAVENLY RICE PUDDING 
1 1/2 c. cold cooked rice
1 1/2 c. mini-marshmallows
16 oz. can pears, drained & diced
1 c. whipping cream, whipped
2 tbsp. lemon juice
1/2 c. sifted confectioner's sugar

Mix first 3 ingredients. Whip cream and add sugar and lemon juice at end of beating. Fold into the rice mixture. Chill.

May use colored marshmallows at add color. Also may use Cool Whip and leave out lemon juice and sugar.
