CREME DE MENTHE CAKE 
1 pkg. white cake mix (not pudding type)
3 egg whites
1 c. water
1/4 c. creme de menthe, divided
1/3 c. oil
1 (16 oz.) can chocolate fudge topping (Hershey's)
1 (8 oz.) carton Cool Whip, thawed

Combine cake mix, egg whites, water, oil and 2 tablespoons creme de menthe. Beat 2 minutes at high speed of electric mixer. Reduce speed to low, beat 1 minute. Pour batter into a greased and floured 13x9x2 inch baking dish. Bake at 350 for 25 minutes or until a wooden pick inserted in center comes out clean. Let cool completely in pan.

Spread fudge topping over cake. Combine Cool Whip with remaining 2 tablespoons creme de menthe. Mix well and spread over fudge topping. Cover and chill 2 hours. Yield: 15-18 servings.
