CHICKEN CHOW MEIN 
1/4 c. butter
1 c. chopped onions
1 c. chopped celery
1 c. chopped celery
1 c. hot water
1 1/2 c. diced cooked chicken
1 tsp. salt
1/8 tsp. pepper
1 can drained bean sprouts

THICKENING:

1/3 c. cold water
2 tbsp. cornstarch
2 tsp. soy sauce
1 tsp. sugar

Melt butter, saute onion and celery. Add hot water and cook 5 minutes. Add chicken, seasoning and bean sprouts. Heat until boiling point. Add thickening and stir lightly. Cook 5 minutes. Serve piping hot on chow mein noodles.
