CHICKEN CHOW MEIN 
1/4 c. butter
2 c. cooked chicken, diced
2 c. celery, cut fine
1 tsp. salt
1 can drained Chinese vegetables
1 can cut up water chestnuts
1 1/2 c. hot water or broth from cooked chicken
1 c. chopped onion
1 can mushrooms
1/4 tsp. pepper

Melt butter, fry onions 3 minutes. Add celery, salt, hot water or broth. Cover and cook 5 minutes. Add vegetables and chicken. Cook 5 minutes longer. Add thickening. Stir and cook 1 minute. Serve hot with Chinese noodles or rice. Serves 4.

THICKENING:

2 tbsp. cornstarch
2 tbsp. cold water
1 tsp. sugar
1 tbsp. LaChoy soy sauce

Mix together.
