BANANA ALMOND LOAF 
2 c. ripe banana puree
1/2 c. oil
1/2 c. granulated sugar
1/2 c. brown sugar
3 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 1/2 c. almonds, chopped
1/2 tsp. salt

Preheat oven to 350 degrees. Grease and flour two 7 3/4 x 3 5/8 x 2 1/4 inch loaf pans. Set aside.

Beat first 6 ingredients together. Combine next 3 ingredients and salt. Stir into the banana mixture. Reserve 2 tablespoons almonds for the top. Stir remaining almonds into batter. Divide batter into the 2 pans, sprinkling each with 1 tablespoon almonds. Bake 50 minutes or until a toothpick inserted comes out clean.

If top starts to brown, cover lightly with foil. Cool in pan for 10 minutes, then turn out onto a wire rack. Let cool. Makes 2 loaves.
