CARROT AND BEET BREAD 
3 egg yolks
3 egg whites
1 1/2 c. sugar
1 c. salad oil
1 c. grated carrots
1 c. grated beets
1 c. chopped nuts
2 c. flour
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
2 tsp. vanilla extract

Mix all ingredients but egg whites in a large bowl. Beat and fold in beaten egg whites. Bake at 350 degrees for 1 hour or longer in 9x5 inch pan.
