CHINESE CHICKEN SALAD 
4 tsp. sesame seed oil
1 tsp. salt
1 tsp. monosodium glutamate (optional)
2 tbsp. vinegar
2 tbsp. sugar
4 tbsp. salad oil
4 stalks green onions
1 head lettuce
3 - 4 chicken breasts
1 pkg. slivered almonds, toasted
2 tbsp. sesame seeds, roasted
2 oz. saifun, bead thread, deep fried until puffy

DRESSING:

Mix sesame oil, salt, monosodium glutamate, vinegar, sugar and salad oil in covered container. Shake dressing well before pouring over salad.

SALAD:

Lightly salt chicken breasts and bake. Chicken breasts may also be boiled. Shred cooked chicken breasts into bite-size pieces. Slice green onion paper thin diagonally. Tear lettuce into bite-sizes. Toss together lettuce, green onions, and chicken. Sprinkle slivered almonds, saifun and sesame seeds. Shake dressing well and pour over salad and toss lightly. Serves 8.
