GARDEN TACO RICE 
1 lb. ground beef
1/2 c. chopped onion
1 (1 1/4 oz.) pkg. taco seasoning mix
1 1/2 c. water
1 1/2 c. thinly sliced zucchini
1 c. frozen corn
1 (14 1/2 oz.) can stewed tomatoes
1 1/2 c. uncooked instant rice
4 oz. (1 c.) shredded Cheddar cheese

In large skillet, brown ground beef and onion, drain. Stir in remaining ingredients except rice and cheese; bring to boil. Stir in rice. Reduce heat to low; cover and simmer 5-7 minutes or until liquid is absorbed, stirring occasionally. Remove from heat. Fluff mixture with fork; sprinkle with cheese. Cover;/ let stand 3 minutes or until cheese is melted. Garnish with cilantro and cherry tomatoes if desired.
