GARDEN RICE SALAD 
6 oz. pkg. long grain and wild rice
1/2 c. mayonnaise
1/4 c. plain yogurt
1 c. diced celery
1 c. cubed tomatoes
1/2 c. diced cucumber
2 tbsp. chopped parsley
1/4 tsp. seasoned salt
1/8 tsp. pepper
1/4 c. chopped dry roasted, unsalted peanuts

Cook rice according to package omitting butter. Toss with next 8 ingredients. Cover, chill and garnish with peanuts. 8 servings.
