APPLE NUT MUFFIN 
1 apple, chopped
2/3 c. apple juice or milk
1 tsp. vanilla extract
2 c. all-purpose flour
1 tbsp. baking powder
1/2 tsp. salt
1/4 c. granulated sugar
1/4 c. firmly packed light brown sugar
1/3 c. oil
1/2 c. chopped nuts
1 egg

Mix brown sugar and 1/2 teaspoon cinnamon and set aside.

Grease 12 (or 24) muffin cups. In bowl beat eggs with juice, oil, vanilla; stir in flour, sugar, baking powder, salt until flour is moistened. Batter will be lumpy.

Sprinkle cinnamon and sugar on top. Bake at 400 degrees for 20 minutes or until brown. Immediately remove from pan. Makes 12 (or 24) muffins.

4 c. all-purpose flour
2 tbsp. baking powder
1 tsp. salt
1/2 c. granulated sugar
1/2 c. firmly packed light brown sugar
2/3 c. oil
1 c. chopped nuts
2 eggs
