RICE PUDDING 
1 1/2 c. Carolina rice
1 qt. water
2 qts. milk
3 egg yolks
1 tsp. vanilla
1 c. sugar
1 tbsp. sugar
1/2 tsp. cinnamon

Combine water and milk in pot. Let come to simmer. Put rice in pot and let it cook with low flame, stirring frequently. When rice becomes mushy and liquid is thick, close flame. Then add 3 egg yolks and vanilla, then stir in 1 cup sugar. Pour into pan and fold in the 1 tablespoon sugar and 1/2 teaspoon of cinnamon. Cool. Serve with whipped cream if desired.
