BAKED CHICKEN BREASTS WITH FRESH
BASIL
 
10 boneless skinless chicken breasts
3/4 c. lowfat yogurt
1/2 c. chopped fresh basil
2 tsp. cornstarch
1 c. fresh whole wheat bread crumbs
2 tbsp. freshly grated Parmesan cheese

Arrange chicken in single layer in baking dish. Combine yogurt, basil and cornstarch; spread over chicken. Combine bread crumbs, and Parmesan cheese; sprinkle over chicken. (Recipe can be prepared to this point, covered and refrigerated for up to six hours. Let stand at room temperature for 30 minutes before cooking.) Bake in 375 degree oven for 25 to 30 minutes or until no longer pink inside. Makes 10 servings.
