CANCUN CRAB 
1 medium red pepper, diced
1 medium onion, diced
butter
3 (6 oz.) cans crab
2 eggs
3/4 c. seasoned bread crumbs
1 heaping tbsp. mayonnaise or to taste
3 tbsp. Dijon mustard
1/4 tsp. pepper
1 tsp. cayenne pepper
8 drops Tabasco
4 English muffins, split and toasted
2 ripe tomatoes, sliced 1/4-inch thick
4 slices Swiss cheese, halved

Sauté red pepper and onion in butter. Mix with crab, eggs, bread crumbs, mayonnaise, mustard, pepper, cayenne and Tabasco. Scoop onto English muffin halves in the following order: English muffin, tomato slice, scoop of crab mixture and Swiss cheese slice. Place on baking sheet.

Bake at 325°F for 15 to 20 minutes or until cheese has melted and crab is warm.
