LOMO SALTADO - PERU | |
1 lb. tenderloin or chicken cut in sm. pieces, 2x1/2" wide strips 2 sliced onions 2 tomatoes, peeled & cut 4 cloves garlic, chopped Parsley, chopped 1 red or green pepper, cut in strips (sweet) Salt & pepper Hot French fried potatoes Brown meat in fat. Then add onions, tomatoes, red or green pepper and parsley. Cook until meat is tender. Just before serving, toss in the equivalent of hot French fried potatoes. Serve. Usually served with a mound of white rice. Note: Add a little liquid when cooking if it seems dry; it should come out slightly juice. |
