FUDGE CANDY 
3 c. sugar
1/2 c. cocoa
1 1/2 c. milk
1 tsp. vanilla
4 tbsp. butter
Dash of salt

Mix sugar and cocoa together in a heavy high sided saucepan. Add a dash of salt and milk; mix well. Stir over medium heat until all sugar is dissolved and comes to a boil, then don't stir again. After about 30 minutes, test by dropping some candy into a cup of cold water. You will have to keep testing until one forms a firm ball. About 15 minutes more.

Remove from heat, add butter, vanilla and nuts. Let set in cold water for about 5 minutes, then beat until candy is thick. You will have to hurry once it's ready. Push into a buttered 8 inch square dish. After it's cool, cut into squares.
