RICE PUDDING 
1/4 c. river rice
1 qt. milk
1/3 c. sugar
1 egg
1 tsp. vanilla

Wash rice in cold water, drain well. Put rice in medium pot, add milk, (save 1/2 cup milk from quart). Add sugar to milk and rice mixture. Boil slow for 40 minutes until rice is soft and fluffy. Mix egg, vanilla and 1/2 cup of milk in separate bowl. After rice has cooked for 40 minutes, add egg, vanilla and milk mixture. Cook for an additional 3 minutes.
