AMBROSIA SWEET POTATO BAKE 
6 or 7 c. sliced sweet potato, cooked or canned
1/2 lemon, sliced
1/2 orange, sliced
1 c. crushed pineapple
1/2 c. brown sugar
1/2 c. shredded coconut
Maraschino cherries for garnish

Alternate potatoes with lemon and orange slices in a buttered 11 1/2" x 7 1/2" x 1 1/2" baking dish. Combine pineapple, sugar, butter and salt. Pour over all. Sprinkle with coconut and garnish with cherries. Bake 30 minutes at 350 degrees.

Serves 8-10.
