STIFFADO 
3 lb. beef, 1 1/2" cube
1/2 c. butter
2 1/2 lb. sm. onion
6 oz. can tomato paste
1/3 c. red wine
2 tbsp. balsamic vinegar (or red wine)
1 clove garlic, minced
1 bay leaf
1 cinnamon stick
1/2 tsp. whole cloves
1/4 tsp. cumin
2 tbsp. raisins

Melt butter in heavy casserole. Coat meat. Do not brown. Cover with small onions. Sprinkle raisins.

Make sauce or tomato paste, vinegar, sugar, spices, etc. Pour over onions. Put bay leaf on top. Simmer covered at 325 degrees for 3 hours. Do not stir.
