3 c. sugar 1 tbsp. butter 1 tbsp. milk 3/4 tbsp. vinegar 1/2 tsp. salt 1 c. boiling water Mix sugar, butter, milk, vinegar and salt thoroughly, then add boiling water. Cook slowly for a few minutes in a covered saucepan. Remove cover and continue cooking until it forms a medium ball (238 degrees) in cold water. When the exact temperature of 238 degrees has been reached, remove from fire and pour on a cold wet platter. Do not stir, beat or mix mass until it has cooled to correct temperature (110 degrees). When 110 degrees has been reached, beat with spatula until it becomes white and creamy and you can take it in your hands and knead it. |
