WASSAIL 
2 1/2 c. sugar
3 sticks cinnamon
1 1/2 tsp. whole cloves
2 c. strong hot tea
3/4 c. lemon juice
2 c. water
2 tsp. crystalized ginger
1 qt. apple cider
2 c. orange juice

Bring sugar, water, cinnamon, ginger and cloves to boil. Boil to a syrup about 5 minutes. Add cider, tea, orange juice and lemon juice. Bring again to a boil. Serve hot. Makes 2 1/2 quarts.
