SOFT AND DELICIOUS 2 HOUR WHOLE
WHEAT BREAD
 
5 c. warm water
2 tbsp. yeast
1/3 c. honey
1/3 c. oil
2 eggs
1/3 c. potato flakes
1 tbsp. salt
4-5 c. unbleached flour

Dissolve yeast in water. Make a sponge using all ingredients down to, and including salt. Use beaters or a mixer. Let rest 10 minutes. Add remaining flour gradually as needed to make a soft dough. Knead on a floured board. Cover with plastic wrap and let rise until double. Punch down; shape into 4 loaves; place in greased pans. Cover and let rise again until double. Bake at 350 degrees for 30 to 40 minutes. Put hot bread on a towel to cool for soft crust.
