OPEN-FACED CRAB SANDWICHES 
2 c. chopped or flaked crab
1 c. American cheese, grated
1 tbsp. onion, minced
4 oz. or more cream cheese
1/3 c. mayonnaise
Salt and pepper

Mix together; spread on slices of French bread or burger buns. Put under broiler at 350 degrees until bubbly and starting to brown. Good either hot or cold. I prefer the French bread.
