CARROT CAKE 
2 c. sugar
2 c. flour
2 tsp. baking soda
1 level tsp. cinnamon
1 rounded tsp. salt
1 1/4 c. cooking oil
2 eggs
3 c. finely grated carrots
3/4 c. coconut
1/4 c. pecans

Mix dry ingredients. Then add oil and eggs. Mix well. Add carrots, coconut and pecans. Bake in 350 degree oven in angel cake pan or layer pans for 35 to 40 minutes.
