MOZZARELLA MEATLOAF 
1 1/2 lbs. ground beef
1 tsp. salt
1/4 tsp. pepper
1 tbsp. onion flakes or minced onion
1 egg, lightly beaten
1/2 c. bread crumbs, can be flavored
1 (4 oz.) can mushroom stems and pieces
1 1/2 c. shredded Mozzarella cheese
1 (8 oz.) can tomato sauce

Combine meat, salt, pepper, onion, egg and bread crumbs. Drain mushrooms; reserve liquid to make 1/2 cup. Add it to meat. Mix lightly until well combined.

Press mixture into a 14 x 10 inch rectangular shape on waxed paper. Shred Mozzarella, sprinkle over meat, leaving 1/2 inch boarder around it. Roll up starting with the shorter side. Place in pan and spread half of sauce on top and bake at 375 degrees for 45 minutes. Combine rest of sauce with mushrooms and spread over meatloaf. Then bake for 10 minutes more. Delicious.
