ITALIAN MEAT LOAF WITH
MOZZARELLA CHEESE
 
1 1/2 lb. ground beef
1/2 c. bread crumbs
1/4 tsp. pepper
1 egg
1 tsp. salt
1 (8 oz.) tomato sauce
1 1/2 c. grated mozzarella cheese
1/4 c. Parmesan cheese
1 tsp. oregano

Combine first 5 ingredients, 1/2 cup tomato sauce and 1/2 teaspoon oregano in bowl, mixing well. Pat into rectangle on waxed paper. Sprinkle with mozzarella cheese. Roll as for jelly roll, sealing edges and ends. Place in loaf pan.

Mix remaining tomato sauce with 1/2 teaspoon oregano. Pour over loaf. Sprinkle with Parmesan cheese. Bake at 350 degrees for 1 hour.
