SPINACH TURNOVERS | |
Pastry: 3 (3 oz. ea.) pkg. cream cheese, at room temp. 1 1/2 c. all-purpose flour 1/2 c. (1 stick) butter, at room temp. Mix cream cheese and butter thoroughly. Add flour and work until smooth. Chill. Roll to 1/8-inch thickness on a lightly floured surface. Cut with a 3-inch cutter. Fill with a teaspoon of the filling (see below). Fold over dough and press edges. Prick top crusts with a fork. Bake at 450°F for about 15 minutes. Filling: 4 slices bacon, diced 2 cloves garlic, minced 3/4 c. scallions, chopped 1 pkg. frozen spinach, thawed 1 c. cottage cheese, creamed salt and pepper 1/8 tsp. nutmeg Sauté bacon until crisp. Remove pieces (set aside) and drain. Sauté garlic and scallions until tender in some of the bacon grease. Add thawed spinach and cover. Cook until tender.
