SOUR BEEF 
2 to 4 lbs. lean beef
Salt
Pepper
2 tbsp. sugar
1 onion (large)
Vinegar (white)
Pickling spices 2 to 3 tbsp.
12 ginger snaps

Put beef in bowl, sprinkle good with salt, pepper and 2 tablespoons sugar. Peel and slice onion over this. Cover beef with vinegar, if too strong use half water. Marinate 2 to 4 hours or overnight.

Place beef and liquid in pan. Tie pickling spices in cheesecloth and cook with meat. Watch liquid, add more water and vinegar if needed. When beef is nearly done, soften ginger snaps in little water and add to beef. Add more ginger snaps if gravy is not thick enough.

POTATO DUMPLINGS:

Cook and mash about 6 potatoes. When cooled, mix enough flour to potatoes until mixture does not stick to your hands. Form into balls. About 1/2 hour before your meal place dumplings on top of beef and gravy, cook 15 minutes without lid and 10 minutes with tight lid.
