POTATO STICKS | |
2 yellow gold potatoes (if unavailable, use 2 baking potatoes) 2 sweet potatoes 1/4 c. olive oil 1 clove garlic, minced 1 tsp. chopped fresh rosemary 1/2 tsp. paprika 1/4 tsp. salt 1/8 tsp. pepper Scrub gold and sweet potatoes; pat dry with paper towels. Pierce each with a fork several times. Arrange in circle in bottom of microwave oven. Microwave potatoes on high until tender, about 10 to 15 minutes, rearranging 2 or 3 times. Set potatoes aside to cool slightly. In microwavable bowl, combine oil and remaining ingredients. Microwave on high 2 minutes. Preheat broiler. Cut potatoes lengthwise into thick wedges or sticks. Arrange on broiler pan. Brush with oil mixture and broil until lightly browned. Serves 4. |
