BROCCOLI BUTTERMILK SOUP 
1 bunch broccoli, washed and chopped (approx. 12 oz.)
1 med. sweet onion, chopped
2 cloves garlic, chopped
2 c. buttermilk

Combine first three ingredients and steam over boiling water until tender, about 10 to 15 minutes.

Transfer vegetables to blender or food processor and blend until pureed. With the motor running, slowly pour in the buttermilk. Do not overprocess or soup will be too frothy.

Serve hot or chilled. If necessary, reheat over low heat, stirring occasionally. Do not boil. Yield: 3 to 4 servings.
