BUTTERMILK BROWNIES WITH CHOCOLATE FROSTING | |
BROWNIES: 1/2 cup (1 stick) butter 1 cup white sugar 1 cup brown sugar 2 eggs 3/4 cup buttermilk 1 tsp. vanilla 2/3 cup cocoa 1 1/2 cups all-purpose flour 1/2 tsp. salt 1/2 tsp. baking soda Preheat oven to 350°F. Grease 9x13-inch pan. Mix butter, sugars, eggs, buttermilk and vanilla, then add cocoa, flour, salt, and baking soda. Bake at 350°F for 25 to 30 minutes or until brownies are just beginning to pull away from sides of pan. Cool 30 minutes then frost. CHOCOLATE FROSTING: 1/4 cup (1/2 stick) butter 1/3 cup cream 1 cup granulated sugar (scant) 1/4 cup cocoa 1 tsp. vanilla Place all ingredients except vanilla in small heavy saucepan. Heat slowly on low heat and stir well while mixture is heating. When mixture begins to simmer or small bubbles are beginning to appear around the edge, stop stirring and let mixture come to a full boil and allow to boil on low heat for 1 minute. Take off the stove and let cool 10 minutes, then add the vanilla and beat with a spoon until it begins to thicken. Pour and spread over brownies. Note: Be sure not to stir while it is boiling as this will cause the frosting to be "sugary" or grainy. Submitted by: Debra |
