WILD RICE CASSEROLE | |
1 c. onion, chopped 1/4 c. butter 1 lb. ground beef or turkey 1/4 tsp. pepper 4 c. frozen hash brown potatoes 2 c. frozen corn (optional) 3 c. cooked wild rice with regular rice (1 c. raw) 1 (10 oz.) can cream of chicken soup 1 c. sour cream 2 c. mild cheddar cheese, divided use 1/3 c. bread crumbs Preheat oven 350 degrees. Grease or Pam a 9 x 13 inch pan. Saute onions in butter, add ground beef or turkey; brown and season with pepper. Sprinkle potatoes in prepared pan. Mix sauteed onion, meat, corn, rice, soup, sour cream, and 1 1/2 cups of cheese and spread on top of potatoes. Sprinkle remaining 1/2 cup of cheese and bread crumbs on top. Bake 40 minutes. 8 servings. Can be prepared and refrigerated overnight and cooked next day. Does not freeze. |
