ENGLISH PEA SALAD 
1 1/2 c. fresh peas
1 c. sharp cheddar cheese cut in cubes
1/4 c. chopped onion
1 (4 oz.) jar diced pimiento, drained
6 sm. gherkins, chopped
3 tbsp. mayonnaise
1/4 tsp. prepared mustard
1/8 tsp. pepper
2 hard-cooked eggs, chopped
Tomato slices

Shell and wash peas; cover with water in a medium saucepan. Bring to a boil; cover, reduce heat, and simmer 8-12 minutes or until tender. Drain.

Combine peas and next 8 ingredients; mix well. Chill. Serve with tomato slices.
