SHRIMP SALAD 
3 hard cooked eggs, sliced
1 c. chopped celery and or peas
1/4 c. chopped green pepper
1/4 c. chopped pickle
1/2 c. mayonnaise
1 (4 oz.) can shrimp
Salt & pepper to taste
Lettuce
Cucumber

With 2 forks, toss all ingredients together lightly except lettuce and cucumber. Place salad in lettuce cups and garnish with cucumber slices.

VARIATION: Shrimp may be substituted with salmon.
